Do you love pasta??
I know I do, and I am yet to meet someone who doesn’t love it.
I dont need to tell you though – if you’re looking to lose some weight then pasta should be dropped from the menu.
But why?
Pasta is a starchy carb which is not only full of unnecessary fuel, it tends to cause large spikes in blood glucose, which in turn causes spikes in insulin levels – ultimately leading to fat storage.
Pasta is processed from wheat and we are only able to consume it due the processed nature of the grain. Have you ever tried to chew on a stick of wheat?? good luck digesting that! It also contains lectins, phytates, and gluten which tend to disagree with most digestive systems.
So what is the solution?
Kirsty, from ‘Kirsty Lou’s Pantry’ has been nice enough to provide us with an amazing substitute – Zucchini Pasta.
Zucchini pasta is a great gluten free, paleo alternative to pasta! I used to love eating pasta before I adopted a gluten free diet. I’ve tried and tested many substitutes but this one is my favorite. Not only is it light and simple to do, it is unprocessed, carb free and increases the nutrients in your meal.
Zucchini is low calorie, full of vitamins and antioxidants and has anti-inflammatory properties.
Zucchini pasta recipe
- Using a julienne peeler. Peel zucchini length ways on one side until you get to the seeds.
- Rotate and peel the other sides ensuring you avoid the seeds. (If you get some of the seeds that‘s ok, they just don’t hold as well and might become mushy when cooked.)
- Place julienne zucchini in boiling water for 30-45 seconds.
- Drain the water and serve with your pasta sauce of choice.
